EGGPLANT ROLLS WITH CHEESE
1 medium eggplant 3 Tbsp. feta cheese 3 Tbsp. cream cheese 1 tsp. oregano 2 Tbsp. corn oil 4 Tbsp. Italian sauce (marinara)
Peel eggplant and cut into long, thin slices. Brush with a little oil and grill until soft.
Combine cheeses with oregano and spread mixture over eggplant slices. Roll into cylinders and arrange on a serving plate. Pour sauce over and refrigerate until serving.
