Shawarma is the Arabic name of this very popular street food (or try doener kebab, the Turkish name). I donīt have a recipe for homemade shawarma (not sure if there is one) but it is usually made of slices of lamb marinated in olive oil, onion, rigani (wild oregano), thyme, parsley, sometimes mint and other herbs, sometimes garlic and spices (baharat spice blend or something similar). This is threaded in dense layers on a vertical, revolving spear and grilled in a special oven. Meat is cut from the surface as it browns and usually served in a pitta bread, with some spicy sauce or dip.
