Here's a local Chinese recipe to share with all of you. It's called Huat Kueh (read as 'what ku-ay'). 'Huat' means has 2 meanings. One is 'prosperity' and the other is 'to rise'. 'Kueh' means cake. This recipe requires you to steam the cake and the end product looks like a cup cake with the top looking like a volcano.
Huat Kueh
150 g self raising flour 150 g sugar 1 egg 175 ml coconut milk colouring
1. Cook the sugar with the coconut milk to melt it. Leave to cool. 2. Prepare a steamer. Warm up a muffin tin in the steamer. 3. Fold in the flour gradually to make a smooth paste. Then add the egg. Beat well. 4. Next, add in the coconut milk and stir well. 5. Add the colour of your choice. 6. Pour into the warm muffin tin, filling the moulds to about 3/4 full. To prevent condensed water from dripping into the cake, wrap the lid with a tea towel. 7. Steam in rapidly boiling water for about 20 min. 8. When it is cooked, remove from the mould and serve.
