Hi Mark, Checked with my Sicilian Mom and she is not familiar with the type of
Baccala recipe you have described. Baccala is the correct spelling and is a Cod
Fish Salad. This is our family recipe and can be served with polenta. Sorry it
is not the one you are looking for but hope you like it. My Mom is going to
check with some of her friends that are not Sicilian as they may be familiar
with your recipe.
COD FISH SALAD (Baccala)
dry cod fish (any amount as needed)
garlic powder (to Taste)
1 TBS. chopped fresh parsley (more if needed)
dash salt
olive oil (as needed)
Buy any amount desired of dry cod fish fillet. Cut into 3 inch pieces. Keep
it in fresh water for 24 hours. Change the water at least twice, then boil it
in sufficient water for 10 minutes. Take it out of water and let cool. Take the
skin off and break it up into small pieces. Sprinkle with garlic powder,
chopped fresh parsley, salt and olive oil. Buon Appetito!
