I've tried this with Lebanese friends, and it's very good. Give it a shot.
4 teaspoons Turkish coffee 2 teaspoons sugar 10 ounces water
Combine above ingredients and cook on a high flame. As foam appears on the top, skim it off and spoon it into demitasse cups. Return the coffee to the heat for one or two more minutes. Remove from heat and pour coffee into cups. The foam will rise to the top. You may also flavor this with cardamom seeds; add them in the beginning when the coffee is beginning to boil. It's an old middle eastern custom to read the coffee grinds when you have finished drinking.
