Cabbage Bhaji Serves 4-6 (For the microwave)
2T oil 1/2 t black or white mustard seeds 8-10 fenugreek seeds (optional) 10-12 curry leaves (or 1 T curry powder) 2-4 dried chili peppers 2 fresh green chili peppers, seeded and sliced lengthwise 1 head green or white cabbage, finely shredded 1 t salt or to taste 1/3 flaked coconut, finely ground 1 ripe tomato, sliced 1 T finely grated coconut
NOTES: Obviously, you can adjust any seasonings to taste i.e. more or less chili peppers etc.
Curry leaves can be had from an Indian or Pakistani grocers.1) In a large casserole dish add the oil, mustard and fenugreek seeds, curry leaves (or powder) and chili peppers. Cover with cabbage.
2) Cover the casserole with a lid or with pierced plastic wrap and cook at 100 % (High) for 3 minutes. Stir and cook for another 3 minutes.
3) Add salt and the ground coconut; stir and mix well. Re-cover and cook on 100% for a further 6 minutes, stirring every two minutes or so.
4) When cooked arrange the sliced tomato on the cabbage and sprinkle with the extra 1 T of coconut. Cover and cook on 100% power for 1 1/2 minutes. Let stand for 5 minutes before serving. I also have a recipe for cabbage with potatoes but it doesn't have any mustard seeds.
