Aunt Dora's Pasta E Fagiole
Pasta e Fagiole Della Mia Zia Dora
Serves 4

This version is credited to my father's laste sister, my aunt Dora.

1/4 cup olive oil
1 large onion, diced
2 cloves garlic, minced
1, 8 ounce can chick peas drained and rinsed - you may sub. great northern or
cannellini beans
2 tablespoons fresh, flat-leaf parsley, chopped - or 1 teaspoon dried parsley
salt and black pepper
½ pound spaghetti, broken into pieces

1 pasta pot
1 large saucepan
1 long handled wooden spoon

Freshly grated parmesan or pecorino romano cheese

Bring a large pot of salted water to a boil for cooking the pasta.
In a saucepan, heat the olive oil over medium heat. Add the onion and
saute until soft and beginning to brown. Add garlic, cook briefly and remove
from heat.
Stir the beans into the olive oil, onion and garlic. Season with
parsley, salt and pepper.
Cook pasta until al-dente. Drain pasta and return it to the cooking
pot.
Pour the bean mixture over the pasta and toss to combine.
Serve hot in warmed bowls with freshly grated cheese and black pepper.
