ISO: Saganaki--greek fried cheese

Looking for a recipie to re-create the saganaki dish that has come to be my favorite whenever I visit Greek Town in Chicago. It is a fried square of cheese (unknown type) that they bring out to you on a plate, pour some sort of alcohol on it, set it on fire, then put it out with lemon juice. I'm mostly in need of what type of cheese is used,what it is fried in, and the alcohol used. Thanks in advance.
