500g chicken breast 1 T. cornflour (cornstarch) 1 egg white, lightly beaten 1 cup oil 250g walnut halves 1 t. sugar 1 T. soy sauce 2 T. chinese cooking wine or dry cherry
skin and bone chicken breast, and cut meat into strips. Mix cornflour and egg white. Add chicken and coat evenly. Heat the oil in a wok. Deep-fry the chicken, in batches, for 2 minutes; drain well. Reheat the oil and deep-fry the chicken until golden. Drain and keep warm on a serving dish. Pour off all but 1 T. oil from wok.. add walnuts, reduce heat and stir-fry for 1 minute. Remove and sprinkle over the chicken. Add sugar, soy sauce and cooking wine and simmer 2 minutes. Remove from heat. Pour over chicken or serve separately. Garnish with coriander leaves and sliced red chilies.
Notes: walnuts are often bitter when fried. To remove the bitterness they can be peeled. Simmer 1 minute then drain and remove the skin with a skewer. Dry thoroughly.
