I have others but this one is my favorite: Remove seeds and pith from 1 (4 ounce) can whole California green chiles. Cut 1/4 to 1/3 pound jack cheese in large chunks and tuck into chiles. Butter 1-1/2 quart casserole and arrange chiles side by side in bottom. Using mixer beat 4 eggs till thick and foamy, then add 1/3 cup milk, 1/2 cup flour (unsifted), 1/2 tsp baking powder. Beat till as smooth as possible. Pour egg batter over chiles, moistening evenly. Sprinkle with 1 cup grated sharp Cheddar cheese. Bake uncovered at 375 for 30 minutes, till puffed and appearing set when shaken. Serve at once with heated canned marinara sauce to pass as a topping, if desired. Happy Cooking, Betsy recipelink.com
