Hi, This is,t the typical peri-peri (portugeuse style)chicken dish but it is very tasty ....... Honey Peri Peri Chicken ***************************
1 (2-1/2 - 3 1b.) chicken 1/2 cup all-purpose flour 1/2 cup cornstarch Corn oil for frying 2 stalks green onion, shredded
Marinade: ************ 2 Tbsp. sherry 1 tsp. garlic salt 2 Tbsp. soy sauce Honey-spice sauce: 1 tsp. shredded ginger 1/2 cup lemon juice 1/2 cup water 1 tsp. crushed Peri Peri pepper 3-4 Tbsp. honey Cut chicken into small serving size pieces. Marinate with sherry, garlic salt and soy sauce for at least 1 hour. Mix honey spice sauce in a bowl. Dip each chicken piece in flour-cornstarch mixture. Heat oil over 375°. Add chicken pieces a few at a time. Fry until golden brown, about 4-5 minutes. Drain. Pour all but 1 tablespoon of the oil out of pan, add ginger and remaming sauce ingredients. Stir chicken pieces into honey spice mixture. Stir in shredded onion. Serve hot. Serves 4 to 6.
