Hi Donna,

I believe they use a kind of seaweed gelatin thing ....we call it agar-agar. It's either in powder form or in strips. You may be able to get it at the chinese grocery. To make Almond jelly (as we call it)...we boil about 1 tsp of agar agar powder to one teacup of milk. If you like it crunchier, add more agar-agar powder or less milk. You can use fresh milk or part water and part evaporated milk. Add in sugar to taste and almond essence. Pour into moulds and leave to cool. It sets at room temperature when it cools down.
Alternatively, if you cannot find agar-agar powder, you can try one of those almond jelly in a pkt. Just follow the instructions on the box. I haven't tried this b4 so i dunno how good it is.
