Sauteed Flounder

2 (6-8 oz.) fresh flounder filets
l cup grated parmesan cheese
l cup panko(japanese bread crumbs)
2 tbls. butter or olive oil
3 eggs, well beaten
l cup flour

Combine panko and parmesan cheese in a shallow bowl and mix well. Dredge the flounder filets into flour, then dip the filets into the egg mixture and finish by pressing the filets into the panko bread crumbs. Saute the filets in butter or oil over mrdium-high heat for about 6 mins per side, or until golden brown. Serve with tartar sauce.
