Icelandic Torte (Vinaterta)

1 egg
1 c.brown sugar
3/4 c.butter
1/2 c.milk
1 tsp.b.powder
1 tsp.vanillla
3 1/2c.flour
Cream butter & sugar,add egg & vanilla
Add flour, chill. Divide dough into 8to 10 equal
parts.Roll out and use a small dinner plate
to act as a pattern and use a sharp knife to cut
out circle. Repeat with remaining dough. Bake each layer on a cookie sheet lined with parchment paper.(I actually roll out dough on parchment paper)till lightly browned.Layer each large cookie with jam. Frost with your favoite butter frosting.Cover and let stand 2 or 3 days.
We have aways used raspberry jam.This has been our families birthday cake for generations.Served with a little ice cream.
