British Flapjacks
Approx 16 fingers
Flapjacks are one of the many modern descendants of the gingerbread family.
4 oz butter 4 oz soft brown sugar 3 oz golden syrup 8 oz medium or coarse oatmeal (porridge oats are suitable) 2 heaped teaspoons ground ginger
Preheat the oven to 350 degrees F. Melt the butter with the sugar and the syrup in a large heavy saucepan (you will find it easier to measure golden syrup if you put the jar or tin in hot water first).
Stir in the oats and ginger and mix thoroughly. Turn into a shallow, greased 8-inch square baking tin and smooth the top with a knife blade. Bake in the middle of the preheated oven for 20-30 minutes until golden brown.
Let it cool for 10 minutes or so before cutting into oblong bars.
Only remove from the tin when completely cold.
