Hi Brian - here are a few ides for you. I’ve seen many nice little “bites” where prosciutto is used as a little wrap around something yummy. How about wrapping around something like:
Melon cut in cubes or balls (both orange and green – we call them canteloupe and honeydew here).
Fresh figs, fresh peaches, or any fruit in season that enjoys a salty accompaniment. A bit of flavorful cheese dabbed inside is also delicious – maybe some mascarpone or gorgonzola.
We can buy extremely thin crispy breadsticks here in the US called grissini – wrap a spiral of the ham around one end of the breadstick, and put a “bouquet” of them in a serving “vase” for a pretty presentation - great with drinks.
Wrap prosciutto around bite-sized pieces of very fresh mozzarella, either chunks from a larger piece, or the small balls (called bocconcini). Wrap a little piece of fresh basil inside, if you like.
Wrap an uncooked fresh prawn/shrimp with a small basil leaf and then with a piece of prosciutto and secure with a small skewer/toothpick. Grill (broil) until the shrimp are just cooked through. A little garlic, lemon and olive oil marinade for the shrimp wouldn't hurt!
