real thing. But it was easy for me to do a good search & I found about 11 pages on the subject at Google. I copied for myself one of the recipes because it lookes excellent, even though it is not exactly as you described it. Here is the recipe, until our dear Olenka produces the real thing.

This recipe is copied from a yellow and aged sheet of paper handwritten by my mother. My mother only prepared these squares at Christmas and as I prepare to bake these goodies, I am transported back in time to snowy Winnipeg and the gathering of all my cousins, aunts and uncles at our traditional Polish Christmas Eve.
One Christmas Eve, just before midnight, as we literally all piled into the '57 Pontiac, we looked in utter astonishment as adults and children alike, saw none other than Santa Claus going from house to house on my Grandmother's snow covered street in the North End of Winnipeg. The drive home was one of awe, and anticipation. When we came to our house - Yes, HE had been there too!
Base: 1/2 cup butter (at room temperature soft) 3/4 cup sugar 1 egg, beaten 2 cups flour, sifted 1/4 tsp salt 3 or 4 tbsp milk
Topping: 1 cup each raisins, chopped dates, chopped nuts 1/2 cup sugar 2 eggs, beaten 2 tbsp lemon juice 1 orange - juice & grated rind 1/2 cup chopped candied red & green cherries 1/2 cup sliced almonds
Method: Preheat oven to 350 degrees F. For the base, cream together the first three ingredients. Sift together the flour and salt. Stir flour mixture, alternating with milk, into butter mixture to form a stiff dough. Pat dough out evenly into a greased 15x10 inch jelly roll pan. for 20 to 25 minutes until edges are lightly coloured.
For topping, mix raisins, chopped dates, chopped nuts, sugar, eggs, lemon juice, orange juice and orange rind together over the baked layer hot out of the oven. Put back into the oven and continue baking for about 20 minutes. Keep checking and remove from the oven when crust is golden brown. While hot, decorate with chopped candied cherries and sliced almonds. Cool and cut into 1 & 1/2 inch squares. |
