Sofrito
Sofrito in the Spanish dictionary means to fry slightly. In Puerto Rico however, sofrito is a basic ingredient which is added to stews of meat, fowl, beans, asopao, etc.
4 bacon slices, chopped 1/4 cup diced cooked ham 1 onion, chopped 1 teaspoon garlic salt 1 tablespoon minced olives 1/2 green pepper, chopped 1 tomato, peeled and chopped 1 tablespoon capers
Cook bacon and ham in saucepan until bacon is almost crisp. Add onion, green pepper, tomato, garlic salt, olives and capers. Cook for 5 minutes over low heat. Remove from heat. Cool. Store in refrigerator. Yield 1/2 cup.
