Sorry for the delay in getting back to you with the recipe for my cheesecake. As I mentioned earlier, I prepare the basic Cheesecake as follows:
Mexican Cheesecake
2 Packages of cream cheese (Philadelphia 190 gms) 2 cans of condensed milk (sweetened) 8 eggs 2 tsp Vanilla flavor
Put all the ingredients in a blender until well blended at low speed.
Before that, you can have ready and pre cooked, some pie crust, on a cake pan of about 12 inch diameter (the type with removable sides) previously greased at the bottom where the pie crust is to be cooked.
Pour the mix on top of it, and cook at 350 F for about 20 minutes or until firm.
Let sit until cool and then remove the sides.
You can add any fruit you want on top of it, using both fresh fruit as well as some fruit syrup which you can easily prepare by adding a little water and a bit of sugar along with the fresh fruit and cook for a few minutes. Then blend the mix and let cool before pouring it on top of the cheese cake. You can also pour some of that syrup when serving.
I personally love raspberry but you can always use strauberries and blackberries. That tastes really good because it is both sweet and sour.
