tapioca, red bean and coconut milk dessert is really quick and easy, it's so tasty tooooo!!!
TAPIOCA
I prefer the small tapioca because they are cute and faster to make.
Bring a pot of water to the boil and put in the tapioca pearls. Boil until most of the pearls are clear-ish. Check if they are done by taking a small amount out of the hot water. If done, they should slowly go clear when taken out. Strain the tapioca pearls into a bowl, cover and refrigerate.
RED BEAN AND COCONUT MILK You can get these canned at Asian supermarket which are a lot easier. Use coconut MILK, not cream of coconut; refrigerate.
FINALLY~~ after things are nice and cool, add a little of all the ingredients together to your liking. It's also good with peaches, especially on a hot summer day ~YUM~! ^o^
