Now thois is interesting, at Christmas I saw a cuban make what they csalled traditional cuban pork for christmas dinner. it was yummy!
He put lemon and garlic in a blender and my have had a few other spices,
he put it on the shoulder and bake for ever, basting as needed, did it long and SLOW I think it was 300o
