Hi Linda :-) I'm not sure if these recipes are what your friend is looking for. These recipes came up when I tried to find a recipe for you. They came from a low carb site (??!?) and the first recipe doesn't include any ginger ? but I'm sure it could be added. Perhaps it was an oversight by whoever wrote the recipe?!? Good luck with your search. I do hope, though, that one of these will be similar to what your friend wants.
Recipe for Ginger Biscuits Yield:24 Servings
4 oz Golden syrup 2 oz Butter 2 oz Dark brown sugar(soft) Rind of one orange, finely grated 2 tbsp Orange juice 6 oz Self-rising flour, sifted
Grease two or three baking sheets. Place the syrup, butter and sugar into a medium saucepan. Add the orange rind and juice to the pan. Heat very gently until the ingredients have completely melted and are evenly blended together. Leave the mixture to cool slightly, then add the flour and ginger. Mix well until smooth. Place small spoonfuls of the mixture on to the baking sheets, leaving room for spreading. Bake in the oven at 350F for about 12 minutes, until golden brown. Leave to stand for 1 minute before easing off a fish slice. Cool completely on a wire rack.
Spicy Ginger Biscuits
1 cup plain flour 1/2 cup brown sugar 2 tbl very finely chopped fresh ginger 1 tsp ginger powder - optional 1 tsp freshly grated nutmeg 60 gm butter 1/2 cup golden syrup
Put flour, ginger, nutmeg and sugar in a bowl and mix well. Melt the butter and syrup in a saucepan and add the bicarbonate of soda and allow to fizz before adding to the flour mix. Put spoonfuls of mix on lined baking sheet.
Bake for 15 minutes at 160deg C. leave on tray a minutes before transferring onto wire rack to cool.
