GERMAN APPLE CAKE
3 cups chopped apples 1 1/2 cups oil 1 cup granulated sugar 1/2 cup brown sugar, packed 3 eggs 3 cups all-purpose flour 2 1/2 tsp cinnamon 1 tsp baking soda 1/2 tsp nutmeg 1/2 tsp salt 1 cup chopped walnuts or pecans 2 tsp vanilla extract FOR THE GLAZE: 3 tbsp. butter or margarine 3 tbsp. granulated sugar 3 tbsp. packed brown sugar 3 tbsp. milk 1/2 tsp vanilla extract
Preheat oven to 325 degrees F. Lightly oil and flour a bundt to tube-type pan.
Place chopped apples in lightly salted water while you prepare the batter.
Beat together oil and white and brown sugars. Add eggs, one at a time until well blended.
Sift together dry ingredients. Add to sugar-egg mixture, mixing well.
Stir in well-drained apples, nuts and vanilla. Spread evenly in prepared pan.
Bake at 325 degrees F about 1 1/2 hours or until done. Cool in pan 20 minutes. Turn out onto wire rack to cool completely. Drizzle glaze over cake before serving.
PREPARE THE GLAZE: In a saucepan, combine glaze ingredients. Bring to boil. Boil 1 minute. Cool slightly. Spoon over cooled cake.
