I took this dish to a potluck lunch at my office today. I prepared all the ingredients the night before, put it together in the morning and let it cook at the office all morning. It is from "Healthy Crockery Cookery" by Mable Hoffman. It was a big hit. Although the recipe says it serves 4 or 5, for the pot luck it served 8 of us and there was till a little left over, since we all just had a little taste of everything.
Ingredients 1/2 lb lean ground beef (I browned ahead of time) 2 Tbsp imitation bacon bits 1 small onion, chopped 1 15oz can tomato sauce 1/2 cup water 1/2 tsp chili powder 1/4 tsp salt 1/4 tsp pepper 2/3 cup long-grain rice 1 8 3/4 oz can whole-kernel corn, drained 1/2 cup green pepper, chopped
Crumble beef into bottom of 3 1/2 quart slow cooker. Sprinkle with bacon bits then onion. Combine tomato sauce, water and spices in a bowl the pur 1/2 of the mixture over the onion. Sprinkle rice evenly over tomato sauce mixture. Sprinkle corn evenly over the rice. Spread remaining tomato sauce mixture over the corn. Sprinkle green pepper on the top.
Cover and cook for 5 hours on LOW or until rice is tender.
