Here's one that uses asparagus, but I think you could substitute green beans:
Mock Guacamole
1 (10 1/2 ounce) can cut asparagus, drained 1/2 cup chopped tomato 1/4 cup chopped onion 1 Tblsp lemon juice 1 Tblsp fat free mayonnaise 1/2 tsp garlic salt 1/2 tsp chili powder 1/2-1 Tblsp chunky salsa
Process asparagus in food processor until smooth. Combine asparagus with remaining ingredients and mix well. Place mixture in a paper towel-lined wire mesh or colander and let drain 1 hour. Cover and chill. Yield: 1 cup.
