Tuna Burgers:
These low-fat burgers have tuna as their base. Top them with ketchup or a lean tartar sauce made from nonfat mayonnaise, minced pickles, lemon juice and minced parsley or dill. Serve the burgers with a simple green salad and nonfat blue cheese dressing.
1 can (12 1/2 ounce) low-sodium water-packed tuna, drained and flaked (albacore tuna) 1/2 cup wheat germ 2 scallions, minced 1 tablespoon minced fresh parsley 1/2 teaspoon dried oregano 1/4 cup nonfat mayonnaise 1/4 cup fat-free egg substitute 1 tablespoon ketchup 2 teaspoons oil 4 Kaiser or crusty hamburger rolls
In a medium bowl, combine the tuna, wheat germ, scallions, parsley and oregano.
In a cup, combine the mayonnaise, egg and ketchup. Pour over the tuna and mix well. Form into 4 patties.
In a large no-stick frying pan over medium heat, saute the patties in the oil until browned and heated through, about 3 minutes per side. Serve on the rolls.
