Pasta with Beans and Tomatoes
4 oz fresh green beans 4 oz penne pasta 1/3 cup chopped onion 1 clove garlic, minced 2 tsp. olive oil 2 ripe roma tomatoes, seeded and chopped(about 1 c.) 1/4 cup dry white wine 2 Tbsp freshly grated Parmesan 1 Tbsp snipped freshy Italian parsley Fresh ground pepper
Wash beans, cut into 1-inch pieces. Cook beans and pasta in boiling water 14 minutes or until pasta is tender. Drain.
In same saucepan cook onion and garlic in hot oil 2-3 minutes or until onion is tender.
Add tomatoes and wine, cook and stir 2 minutes. Toss in drained beans and pasta, Parmesan and parsley. Serve immediately. Sprinkle with pepper if desired. |
