Low Fat Biscuits
These are melt in your mouth texture and a taste guaranteed to cause a real buzz at dinner parties. Perfect for dunking in stew, chili, and soup.
1 1/4 cups all purpose flour 1/2 cup whole wheat flour 1 tablespoon sugar 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt
1 cup cooked mashed potatoes 1 cup buttermilk 3 tablespoons butter or margarin, melted
Preheat oven to 425 degrees F.
Combine first 6 ingredients in a large bowl. Mix well and set aside.
In a medium bowl, whisk together potatoes, buttermilk, and melted butter. Add buttermilk mixture and flour mixture and stir until a soft ball forms. Knead for one minute on a lightly floured surface (add more flour to dough, if needed, to prevent dough from sticking). Roll out 3/4-inch thick. Cut into 2-1/2 inch rounds using a cookie cutter or the rim of wine glass.
Transfer buscuits to a baking sheet that has been sprayed with non stick spray. Bake for 13-15 minutes, until biscuits have puffed up and are golden brown. Makes 14 biscuits.
