Made this Banana Bread for my son who is on a low fat diet. I was not expecting such good results since I thought it would probably not taste too good due to the lack of shortening and the use of whole wheat flour. Was I surprised! It was really good. I didn't have whole wheat pastry flour,(only the whole wheat I use for bread) I used about 1 2/c cup whole wheat flour and 1/3 cup regular unbleached flour. Yum, Yum. Thanks for the recipe.
