This has an unusual taste due to the bourbon, but it is very delicious and moist.
Bourbon sweet potato bread
Serves 8 5 WW points
1 1/4 c flour 1/2 c light brown sugar 1/3 c quick oats 1 T baking powder 1 t grated orange zest 1/2 t baking soda 1/2 t salt 1/2 t cinnamon 1/2 t nutmeg 1 egg 1/2 c buttermilk 1/2 skim milk 3 T butter,melted 5 T bourbon 1 c mashed cooked sweet potatoes 1/2 c raisins 1 c confec. sugar
Preheat oven to 375 degrees. Lightly spray a 4x8 loaf pan. Whisk flour,br.sugar,oats,baking powder,zest,baking soda,salt,cinnamon,nutmeg in a bowl. In another bowl,whisk eggs till frothy. Add buttermilk,milk,butter,and 2 T bourbon. Whisk in sweet potato mixture until blended. Add flour mixture and raisins. Stir to blend but do not overmix. Pour into loaf pan. Bake 1 hour or unitl loaf pulls away from sides. Cool.
Icing: Whisk confec sugar with remaining 3T bourbon. Drizzle over warm loaf. |
