I just dreamed these up and they turned out really good.

Preheat oven to 350 - my oven runs hot so I do 325.

In a food processor blend:
2 egg whites
1 cup mashed ripe bananas (about two large)
1/4 cup nonfat yogurt (or full fat)
1/3 cup nonfat cottage cheese (or full fat)

Add 1/4 cup honey
1/4 cup fructose
1 tsp. vanilla extract
1/2 tsp. maple extract (optional)

Then place mixture in a large bowl. Set aside

In a separate bowl stir together:
1/4 cup ground flax meal
1 cup wheat bran (not germ)
1/2 cup whole wheat flour
1/2 cup soy flour
1 tsp. to 1/2 tsp. cinnamon depending on taste
2 Tablespoons corn starch
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

Add dry ingredients to banana mixture just until moist - don't overstir because you'll get a tough muffin. Line 12 muffin tins with paper and add muffin mixture. Bake for about 15 to 20 minutes or until tops are just firm. Don't overbake! Cool on rack. Freeze or store in fridge. Good with jam or syrup.
