Sorry it took so long to post this but it is worth the wait!!! I hope anyone who makes it enjoys it as much as I do and the others who have tried it. My Dad who is in his 70's absolutely loved it and was shocked when I told him it was made with chicken.

BASIL MUSHROOM CHICKEN LOAF
Super, super YUMMY

Non-stick Spray
2 cups sliced mushrooms (I use button.)
1 onion, chopped
3 cloves garlic, minced (I love garlic. You can put less.)
1 1/2 tsp. dried basil
1/2 cup dry bread crumbs
2 tbsp. freshly grated Parmesan Cheese (I use low-fat Kraft in plastic container.)
1 egg, beaten
1 1/2 lb ground chicken ****
***I use a combination of ground chicken and ground turkey. Specifically 1/2 of a pkg. ground chicken that weighed .390 kg. And 1/2 of a pkg. of ground turkey that weighed .500 kg. I swear it is the combo of the two that yields the yummiest results.
2 tbsp. chili sauce

Spray skillet with no stick spray and heat over medium heat. Cook mushrooms, onion, garlic and basil stirring for about 3 mins. or until softened.

In bowl, combine bread crumbs, parmesan, egg and onion mixture from skillet, ground chicken (and/or turkey) and chili sauce. Mix well. Pat and shape into a loaf pan.

Bake in 350 F oven for 1 hour and 20 mins. or until meat thermometer registers 185 F
(85 C).

Let stand for 10 mins. Pour off any fat. Makes 8 servings.
Per serving 214 calories, 11 g. fat, 19 g. protein, 9 g. carbs., 94 g. chol., 415 mg sodium.)
