UPDATED GRANDMA'S MEATLOAF
2 cups chopped mushrooms 1 1/2 cups chopped broccoli florets 1 cup diced green bell pepper 1 cup diced carrots 1 teaspoon minced garlic 1 teaspoon canola oil 1/2 teaspoon celery seed 1 pound ground turkey breast 1/3 cup catsup 3 tablespoons soy sauce 2 tablespoons Dijon mustard 3 large egg whites 1 cup dried bread crumbs
In a 12-inch frying pan over medium-high heat, frequently stir mushrooms (or diced artichoke hearts), broccoli, green pepper, carrots, onion, garlic, oil and celery seed until carrots are tender to bite, 8 to 10 minutes.
In a bowl, combine vegetable mixture, turkey, catsup, soy sauce, mustard, egg whites and bread crumbs. Pat into 4x8-inch loaf pan, gently rounding top.
Bake in 375 degree F oven until firm to touch, 40 to 45 minutes. For a browner crust, broil 3 inches from heat for a few minutes. Let stand 10 minutes before slicing.
