Spinach Quiche with Rice Crust

3 eggs
1 1/2 cups hot rice
4 oz. shredded cheddar, divided
1 tsp. salt, divided
1/2 cup milk
2 10oz. boxes frozen spinach, cooked and well drained

Beat 1 egg in small bowl. Add rice, 1/2 cheese, 1/2 salt, mix well. Press into 9 inch pie plate. Beat remaining 2 eggs in medium bowl. Add spinach, milk, remaining salt and remaining cheese, mix well. Bake at 375 degrees for 30 minutes.

This recipe can be made low fat using skim milk and reduced fat cheese.
