I just read your post from May 14th, and am providing a late response. This is a recipe I made up, sort of, and most who have tried it enjoy it, including my 16 month old son.
Breaded Baked Tofu
1 (16 oz) block of extra firm tofu, cut in 8 slices. 1 1/2 cups seasoned bread crumbs 1/4 cup grated romano cheese 2 beaten eggs ( or just egg white OK) 1/4 cup low-sodium soy sauce dash worcestershire sauce (about 1 tsp) 1/2 tsp dried oregano (rub between palms to crush) 1/2 tsp herbes de provence, or other herb blend sprinkle of garlic powder to taste dash of dried hot red pepper flakes, to taste Olive oil spray
Combine bread crumbs and cheese.
Combine soy sauce, worcestershire, and herbs in large flat dish (I use 9X13 pyrex). Marinate tofu slices in seasoned soy sauce about 15 minutes, turning once to coat both sides.
Spray flat baking sheet generously with olive oil spray.
Dredge tofu slices in crumbs, then in beaten eggs, and again in crumbs, patting crumbs to make sure they stick. Place on oiled sheet. Spray slices with olive oil. Place on bottom rack of pre-heated 400 F oven.
Bake until bottom is browned, turn slices and bake until other side is browned.
Serve hot or cold, great in sandwiches with sprouts and tomato!
