Spinach & White Bean Pasta

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh spinach -- washed 1 large tomato -- chopped 1 small Vidalia onion -- chopped 4 medium garlic cloves -- chopped fine 1/2 cup chicken broth 1 teaspoon red pepper flakes 15 ounce can white beans -- rinsed and drained 1 pound pasta (penne,shells,bow ties) 1/4 cup olive oil 1 teaspoon sage 1 tablespoon parsely salt and pepper fresh grated parmesen cheese
Saute garlic & onion in oil until soft. Add red pepper flakes & saute for 2 minutes. Then add tomato, chicken broth, beans, sage & parsley. Salt & pepper to taste. Simmer on low while pasta is cooking. Reserve 1/2 cup of water from pasta and add to sauce. Drain pasta , return to pot, add spinah & toss. Add sauce to pasta. Season & top with fresh grated parmesean cheese.

Serving Ideas : Baby greens tossed with a lite dressing is nice!
NOTES : If you can find a spinach pasta it gives the dish a nice color & added flavor. |
