Cali - tell your son he only needs to remember the number !!!!! 1 cup chopped onions 1 cup chopped celery 1 chopped carrot 1 chopped tomato 1 cup rice 1 T. chicken broth granule (or vegetarian, or beef) 1 can (15 oz) cooked beans, drained (black, kidney, etc) Sautee onions & celery in a little oil. Flavored is good. When transparent, add rice & coat with oil as stirring into onion & celery mix. Add 2 cups boiling water & broth granules. Cook until rice is absorbed. Mix in carrots, tomatoes & beans. Put cover back on, lower heat to lowest setting & cook until warm thru. Sprinkle w cilantro or parsley & serve with a squeeze of lime & sour cream. Low fat & vegetarian.
