You're very welcome, here's another - haven't made this in a while, but it was a hit. It's important to serve this immediately after preparing it.

Fettuccine with Silken Tofu Alfredo
Serves 4-6

12 oz. fettucine
2 Tablespoons margarine
3 cloves garlic, crushed
1 lb. silken tofu
1/2 cup milk
1/2 cup Parmesan cheese, grated
1 teaspoon salt
pepper to taste
extra Parmesan cheese for serving

Cook noodles 10-12 minutes, drain. In meantine, saute garlic in margarine until golden. Remove garlic. Combine tofu, milk, parmesan, salt and pepper along with margarine from skillet in food processor or blender. Process until sompletely smooth and creamy. Mix hot noodles and sauce together in a large bowl. Serve at once with extra cheese.

I have a tofu spinach dip recipe, a baked tofu chili relleno recipe and a couple tofu enchilada recipes I have yet to try, have you used tofu in any of those?
