Lori, I have looked through all of my vegetarian cookbooks, as well as several other regular cookbooks. Most of the recipes call for removing the crusts from bread, flattening the bread with a rolling pin,spreading the bread with butter and sprinkling with parmesan. Then you roll the asparagas (and prosciutto, if desired) up in the bread and bake for 10 to 12 minutes at 400 degrees F. These can also be frozen, then baked when you are ready. My idea for you is this: if you have time, experiment a bit and come up with an Asian style summer roll using rice paper wrappers. You could make an Asian style dipping sauce for them. I have tried a recipe of Ming Tsai's that I got from foodtv.com. They were very good but did not have asparagas in them. They might be good with the addition of asparagas. Maybe you could use rice noodles, finely shredded carrota, the asparagas and red pepper. The colors would be beautiful. If you go to foodtv.com., and type summer rolls in the search box, you will see 4 different recipes but only Ming Tsai's is vegetarian. Emeril's recipe and Gourmet Magazine's recipe both have shrimp in them. Another recipe from Ming Tsai has lobster in it. I hope that this gives you an idea of what to do. You didn't say whether you were looking for an appetizer or main dish recipe but, I think that summer rolls could be used either way.
