Here is an easy vegetable caserole...California Vegetable Bake- Take one large red onion, sliced, three green or red peppers, seeded & sliced, and 2 cups musrooms, sliced. Sautee all of these in some vegetable oil in a large skillet. You might want to sautee the mushrooms last since they cook up so fast. You can use zucchini rather than mushrooms if you prefer. When veggies are tender, set aside. Now take a large casserole dish and grease lightly with some butter. Take tne large can of corn, drain, and line the bottom of the casserole with the corn. Spoon the sauteed veggies over the corn, then top with some browned breadcrumbs (brown in a skillet with some butter) and shredded cheddar cheese. When you bring this dish to your friend's house all they'll have to do is pop it in the microwave to heat through and melt the cheese. Serves up good with some rice so you might bring a bowl of cooked rice too. |
