A really good recipe that i made was very simple. For anyone who likes eggplant, try this easy side dish I made up and make any alternations you would like.
All you need to do is slice an eggplant in thin slices and use a brush to brush both sides of each slice with olive oil. Then you grill the eggplant slices until cooked through and top them off with an easy glaze: balsamic reduction, which is easy to make, all you need to do is simmer balsamic vinegar for half an hour until thick and lightly drizzle over eggplant. A little of this goes a long way and the amount of vinegar should be significantly reduced.
