Hi Kelly.. here is a recipe that is popular at my house.
Veggie Fajatas - serves 4
1 pkg portobello mushrooms (whole, not sliced) 1 green bell pepper, halved 1 red bell pepper, halved 2 zucchini, halved lengthwise 1 med. sweet onion (such as vidalia), halved 1 large tomato, halved Favorite italian salad dressing (we like good seasons) Favorite tortillas and salsa (guacamole is nice too)
Place all veggies but onion and tomato in zip lock bag big enough to accomodate (gallon size) and pour enough dressing over veggie to coat. Let marinate 1 hour at room temp, turning bag every few mins to coat all sides of veggies.
Preheat grill to medium hot, and place onion on grill 1st, brushing it with some dressing from the bag. Grill about 5 min, turn onion over, and add mushrooms and zucchini to grill, brushing all veggies with dressing from bag. Grill 5 min, turn all veggies, and add peppers and tomato to grill, brushing all veggies with dressing, grill about 5 to 10 minutes more. Remove veggies from grill as they are done, and chop them coarsely.
Roll up in tortillas -- this is nice served with yellow rice and a side of mexican pinto beans.
