Curry Broccoli Casserole
1 lb. medium firm tofu, cut into 1/2" cubes
3 cups broccoli flowerets cooked
2 Tbsp. margarine
1/2 large onion sliced
1 clove garlic, minced
1 Tbsp. flour
3/4 lb. soft tofu, pureed
1 cup water or chicken style broth
2 tsp. curry powder
dash salt, pepper, sugar
2 cups brown rice, cooked
1/2 cup soy parmesan
Preheat oven to 350F. Place tofu cubes and broccoli in a greased casserole dish. Saute onions and garlic in margarine until onions become transparent.
Mix in flour. Mix tofu puree and water/broth together. Add to flour mixture and cook until thickened. Add spices and rice. Pour over tofu/broccoli mixture and sprinkle with soy parmesan. Bake for 30 minutes.
