I too am a Vegetarian but I do eat beans, lentils, etc. In fact, tonight I am making Tofu Burgers. Your daughter might like these. FANTASTIC FOODS makes a Tofu Burger Mix and that's what I use. You simply drain and mash the tofu, combine it with the Tofu Burger Mix, shape into burgers and fry until golden brown. Serve as you would regular burgers, even melting cheese on them for extra protein. I suggest going to the Library and getting out a few books on Vegetarian Cooking. It is important to combine meatless foods to make a complete protein at each meal. When eating eggs and diary however, the risk of protein deficiency is less greater, however, yes, I agree with Becky, seek out a dietician or a nutrionist, then you will be assured of proper guidelines.
