I'd tried tofu in the past - always disappointed. I usually cut it in squares and used it in stir-fries, then had a big mess sitting in water that had to be changed every day ... YUK. My aerobics instructor, whose a lacto-ovo vegetarian, taught me how to make it palatable. This is really good!
ROSINA'S TOFU SPREAD/DIP:
one 16 oz. block extra-firm tofu, drained and cut in large chunks
1/3 cup reduced fat mayo (or salad dressing)
garlic powder, salt, parsley, Italian or Greek seasonings to taste
fresh ground black pepper
Place tofu chunks in mixing bowl, beat with electric mixer until broken up. Add mayo or salad dressing, beat on low for 1-2 minutes. Add garlic powder, salt and seasonings as desired to taste. Beat on medium until smooth, adding fresh black pepper. You want a consistency that can be spread thickly on a sandwich or scooped up with pita triangles and veggie sticks. When you add the seasonings you enjoy, you can actually eat this stuff! And it's very good for you, researchers are exploring the natural estrogens in it as a natural alternative to hormone replacement therapy. I make up a bowl every Sunday night and spread it on sandwiches, stuff pita breads with it, top baked potatoes with it, adding other veggies, sprouts and lettuce.
