This is very good. The kids are very fond of it. I tore this out of a Woman's day mag.
Dressing 3T. each fresh lime juice an seasoned rice vinegar 2T lite soy sauce 2t sugar 4c thinly sliced napa cabbage 1c each shredded carrots, thin sliced cucumber 1/2c each packed cilantro an mint leaves 1T each minced garlic and fresh ginger 2 2/3c harvest burgers* for recipes (I used crumbled soy burgers) 1/4t crushed red pepper 1c chopped tomato 6 red leaf lettuce leaves
Mix all dressing ingred. in lg. bowl. Top with cabbage, carrots, cucumber cilantro and mint. (don't toss or mix) cover and refrig. Spray lg. pan w/ cooking spray.Heat over med. heat add garlic and ginger and cook about 2 min. until fragrant and justing starting to color. Add burgers, red pepper and 1/2c water. Reduce heat to low, cover and cook couple of min. Gently stir in tomato. Arrange lettuce on platter. Toss cabbage mix with dressing. Put burger mix on top and serve.
