I just made a double recipe of the Chocolate Pudding!

Chocolate pudding- From Simply Vegan

Whisk together in a pot:

1 and 1/2 cups of soy milk

1 Tablespoon cornstarch

1/4 teaspoon vanilla

1/4 cup of maple syrup

1/4 cup cocoa powder

When blended turn on heat stirring constantly until
the pudding thickens. Chill at least 15 minutes before
serving.

Rice pudding

Combine in a pot:

2 cups already cooked arborio rice

1 and 1/2 teaspoons cinnamon

1 Tablespoon vanilla extract

3 and 1/2 cups of soy milk

Heat 15-20 minutes until mixture thickens

These are from Tofu Cookery by Louise Hagler with some changes.
She says that you can substitute the oil with an equal amount of another
liquid and reduce the sweetener. We don't use sugar so I substituted.
You can also use Florida Crystals instead of sugar. I am going to make
a tart this weekend with the lemon pudding listed below in a tart shell
with fresh fruit.

Vanilla Pudding

Blend in food processor until smooth:

1 and a 1/2 pounds tofu (Morinu works well)

1/4 cup of oil

1 cup of sucanat or Florida Crystals

1 Tablespoon vanilla

pinch salt

Chill until set

Banana Pudding

Blend in food processor until smooth:

1 pound tofu

1/4 cup of oil

1/2 cup of sucanat or Florida Crystals

2 Tablespoons vanilla

pinch salt

2 ripe bananas

Chill until set

Lemon Pudding

Blend in food processor until smooth:

1 pound tofu

1/4 cup of oil

2/3 cup of sucanat or Florida Crystals

6 Tablespoons lemon juice

1/2 teaspoon vanilla

pinch salt

Chill until set
