I like to brown ground bef ahead of time and freeze in baggies for quick use. to do this easily I take a large quanity 10 lbs. when on sale and spread on my roaster pan that has one pan with little holes that sits over a 9x13 pan. I add a little water to the bottom pan and "bake" the beef fat drips off into pan with water for easy cleanup. then I bag and freeze in quantitiies I can use in a hurry.
For chicken I buy fryers on sale and boil several then cool and de-bone, I freeze in "baggies" in quanitities I can use for a quick stirfy or other sauce, or pizza. Of course being "frugal" I use the broth for soup, & freeze some of it too.
remember when buying fryers the best buys are 4 lb or more in size, same bones more meat than smaller ones, at least that is what I have read, made sense so I never checked further. ;-)
