I was also looking for a homemade mix to use in my bread machine, just yesterday. I stumbled across the following recipe on the Web, but haven't had a chance to try it out yet. This is actually two recipes. The first is the mix itself, and the second tells how to use it:


Homemade Breadmaker Mix

Amount Measure Ingredient -- Preparation Method

13 cups bread flour
2 tablespoons salt
1/2 cup sugar
1/2 cup nonfat dry milk -- instant


Combine all ingredients in a large bowl. Stir together to distribute evenly. Divide and package in quantities of 2 1/4 cups (for use in a 1 pound breadmaker) or 3 1/3 cups (for use in larger capacity machines). Seal well and label with date and contents. Store in a cool, dry place. Use within 6 months.

Makes about 14 cups of Breadmaker Mix.
Yield: Six 2 1/4 cup packages or four 3 1/3 cup packages.

Basic Bread & Variations w/Homemade Breadmaker Mix

1 lb Loaf:
1 1/2 teaspoons active dry yeast
2 1/4 cups breadmaker mix
1 tablespoon butter -- or vegetable oil
3/4 cup warm water
1 1/2 lb Loaf:
2 teaspoons active dry yeast
3 1/3 cups breadmaker mix
1 1/2 tablespoons butter -- or vegetable oil
1 1/4 cups warm water

Add ingredients to the bread pan in the order recommended by the manufacturer. Use Basic/White cycle, light crust setting.

Variations:
Cinnamon Raisin - To the basic recipe add 1/2 cup raisins and 1 1/2 teaspoons ground cinnamon. If desired, glaze with a powdered sugar glaze while still warm.

French Bread - Eliminate butter or oil.

Sweet Bread (Sally Lunn type) - Add 1 tablespoon of sugar along with dry in
gredients. Bread 1 egg into measuring cup, then fill the cup with water to
the amount called for in the recipe.

Herb Bread - Add 1 1/2 teaspoons dry herbs (rosemary, basil, dill, etc) with the dry ingredients.
