As a mom with 5 children (3 of them picky eaters). I know what you mean:) I use Rice-a Roni Spanish rice mix. I add a quart of home canned tomatoes and about 1 1/2 chopped green pepeprs to 2 boxes (it will also freeze). I also add a pound of browned hamburger but it can just as easily be left out. Cook like it says on the box. Only one out of the 5 dig out the green peppers and even the kid who doesn't like tomatoes loves it. It's quick and easy!!
